CHOCOLATE ZUCCHINI BREAD 
4 eggs
3 cups sugar
1 1/2 cups vegetable oil
3 tbsp. butter
9 tbsp. cocoa
nuts (optional)
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3 cups shredded zucchini
3 cups all-purpose flour

Beat eggs on high until thick and light. Add sugar gradually; then add the next three ingredients. Beat well. Add remaining ingredients. Mix well. Bake at 350°F for 1 hour and 15 minutes.

Makes 2 loaves or 1 tube pan or 1 Bundt pan.
