ISLAND FRIED RICE 
3 c. cooked cold rice
3 tbsp. oil
1 c. cooked chicken, shrimp or leftover meat
2 eggs, slightly beaten
3/4 tsp. salt
1/2 tsp. pepper
1/2 c. sugar
2 tbsp. soy sauce
2 tbsp. green onions, chopped

Heat oil in deep frying pan. Add meat or chicken and cook 1 minute. Add eggs, salt and pepper. Cook, stirring constantly until well mixed. Add rice and soy sauce and cool, stirring constantly. Sprinkle sugar and stir for about 5 minutes, until rice is thoroughly heated. Garnish with green onions. 4 to 6 servings.
