DOCTOR PEPPER CAKE | |
1 c. butter 1 c. Dr. Pepper 4 tbsp. cocoa 1 1/2 tsp. cinnamon 2 c. flour 1 tsp. baking soda 2 c. sugar 1/2 tsp. salt 2 eggs 1/2 c. buttermilk 2 tsp. vanilla Melt butter and add Dr. Pepper. Mix all dry ingredients, add eggs, buttermilk, vanilla and Dr. Pepper mixture. Mix well. Bake at 350°F for 35 minutes in oblong cake pan. DOCTOR PEPPER FROSTING: 1/2 c. butter 1/4 c. Dr. Pepper 3 tbsp. cocoa 2 c. powdered sugar 1/2 c. chopped nuts 1 tsp. vanilla Have butter at room temperature. Mix butter with sugar and slowly add Dr. Pepper and vanilla. Use mixer for best results. Add vanilla and nuts and mix. Ready for Dr. Pepper Cake. |

Also, little known trick, but works well with most cakes. Decrease the temp. to 325°F and increase cooking time by 5 minutes to 40 minutes. This yields a more evenly cooked cake and prevents lop-sidedness.
