DANISH APPLE SLICES | |
2 1/2 c. sifted flour 1 tsp. salt 1 egg, separated 2/3 c. crushed corn flakes or Rice Krispies 5 c. sliced & peeled Michigan apples 1 tsp. cinnamon 2 tbsp. lemon juice or water 1 1/2 c. sugar, plus 1 tbsp. 1 c. shortening Milk 1 c. confectioners' sugar Sift flour, 1 tablespoon sugar and salt; cut shortening in with pastry blender. Put egg yolk into measuring cup and add enough milk to make 2/3 cup. Add to shortening mixture, mix just enough that dough shapes into a ball. Roll out half of dough into 15"x11" rectangle; transfer to baking sheet. Cover with cereal and then with apples. Mix remaining sugar and cinnamon; sprinkle over apples. Roll out other half of dough for crust; place over the apples. Pinch edges together. Beat egg white until stiff; spread on top crust with brush. Bake at 400 degrees for 40 minutes. While hot, drizzle with glaze made of confectioners' sugar and lemon juice or water. Cut into squares. Yield: 16 to 24. |
