SAVORY CHEESE AND ONION PIE 
10 oz. cheese (1/2 Swiss, 1/2 Gruyere) or sharp cheddar
2 tbsp. butter
2 lg. onions
1 tsp. chopped basil
4 tbsp. butter
2 lg. firm tomatoes, sliced
2 lg. eggs
3/4 c. cream
Pie crust

Grate all cheese and toss with flour. Melt butter in a large skillet, slice the onions and saute very gently in butter until they turn golden, about 1/2 hour. Spread 1/3 cheese over bottom of pie dish, then place onions over it. In the butter that is left, heat the tomato slices with basil for 2 minutes. Arrange tomatoes over onions, then cover with remaining cheese. Beat eggs with cream, pour over cheese. Bake in preheated oven at 350 degrees about 35 to 40 minutes. Serves 6.
