PORK FLORENTINE 
1 lb. boneless pork loin, sliced thin
1 tbsp. oil
2 tbsp. butter
2 tbsp. flour
3/4 c. milk
1/4 c. sherry
1 tsp. Dijon mustard
1/4 c. shredded Swiss cheese
1/8 tsp. nutmeg
1 tbsp. Parmesan cheese

Brown pork in oil in skillet 2-3 minutes per side. Remove. Melt butter in same pan. Whisk in flour. Add milk and cook stirring constantly until mixture thickens. Stir in remaining ingredients except for cheeses.

Put pork in casserole dish. Pour sauce over. Sprinkle with Swiss and then Parmesan cheese. Bake uncovered at 450 degrees until lightly browned (7 minutes).
