CARROT CASSEROLE 
1 lb. fresh carrots, sliced & cooked
1/4 c. chopped onion
1 tbsp. chopped parsley
1/2 c. chopped green pepper
1 c. milk
2 tbsp. flour
2 tbsp. butter
1 c. grated cheese
1 tsp. salt
Buttered bread crumbs

Blend butter and flour in saucepan. Add milk, cheese and salt, cooking and stirring until smooth. Combine vegetables and seasonings and pour into buttered casserole. Top with buttered bread crumbs. Bake at 350 degrees for 45 minutes.
