ENCHILADAS 
Leftover or available beans, vegetables, sprouts, potatoes
6 corn tortillas or desired quantity
Las Palmas green enchilada sauce (lg. can) or favorite sauce

Wrap corn tortillas in napkin and place in microwave for 2 minutes or until soft.

One by one, fill tortillas with desired filling and form enchilada; place each one in a Pyrex baking dish. (Enchilada can be large or small depending on filling.) Pour desired sauce over enchiladas and return to microwave for heating or heat in oven at 250 degrees for 30 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
