SOUTHERN BANANA PUDDING 
1 pkg. (6 oz. serving size) Jello vanilla pudding (the kind you cook)
3 egg yolks, slightly beaten
2 1/2 doz. vanilla wafers
2 lg. bananas, sliced
2 egg whites
Dash of salt
1/3 c. sugar

Combine pudding mix, egg yolks and milk in saucepan. Cool and stir over medium heat until mixture comes to full boil. Remove from heat.

Arrange layer of vanilla wafers in bottom of a 2 quart baking dish. Add a layer of banana slices and of pudding, ending with pudding.

Beat egg whites with salt until foamy throughout. Gradually beat in sugar and continue beating until mixture will form stiff shiny peaks.

Spoon lightly onto pudding, sealing edges well. Bake at 425 degrees for 5 to 10 minutes or until meringue is lightly browned.
