BEEF GOULASH SOUP | |
4 slices bacon 2 med. onions, chopped 2 tsp. salt 2 lbs. cubed beef stew meat 1 can stewed tomatoes 1 (6 oz.) can tomato paste 3 med. potatoes, peeled and chopped In large pot, cook bacon until crisp. Drain. Cook onions until tender. Stir in salt. Add meat cubes and bacon. Cook 2 or 3 minutes. Add tomatoes, tomato paste, and 2 cups water. Cover and simmer 1 1/4 hours or until meat is tender. Add potatoes. Simmer 20 minutes. Spoon off fat. Yield: 6 servings. |
