FRESH STRAWBERRY TART 
3/4 cup all purpose flour
1 tsp. sugar
3/4 tsp. grated orange rind
Dash of salt
3 Tbsps. butter
3 Tbsps. cold water
Vegetable cooking spray
3/4 cup lemon low-fat yogurt
1 pint fresh strawberries, washed, hulled and sliced
1/4 cup low sugar strawberry spread, melted
Fresh mint sprigs, optional

Combine first 4 ingredients in a medium bowl, cut in butter until mixture resembles coarse meal. Sprinkle cold water evenly over surface of flour mixture, stir with a fork until dry ingredients are moistened. Shape dough into a ball and chill. Pat dough into a 9 inch spring form pan coated with cooking spray. Prick with a fork. Bake at 375 degrees for 15 minutes or until lightly browned. Remove shell from oven and let cool in pan 5 minutes. Transfer to a wire rack to cool completely. Place tart shell on serving platter and spread yogurt evenly over tart shell. Arrange strawberries slices over yogurt and brush with melted strawberry spread. Garnish with mint sprigs, if desired.
