COUSIN COLLEEN'S COCONUT CREAM
CAKE
 
1 pkg. white cake mix

Follow baking instructions using whites of 4 eggs. Bake and cool. Using handle of a wooden spoon (for diameter size), punch holes in cake - 20 to 24. Have 1 can Eagle Brand sweetened condensed milk at room temperature.

1 lg. container Cool Whip
1/2 pkg. coconut flakes
1 tbsp. coconut extract

When cake has cooled and holes punched in cake, mix condensed milk with coconut extract and pour into the holes, slowly and scraping the mixture into the cake instead of having it dribble between cake and pan. Top with Cool Whip and coconut flakes. Because of Cool Whip, cake must be kept refrigerated. It freezes well.
