PORK EATER'S CASSEROLE 
1 med. head cauliflower
4 tbsp. butter
1/3 c. flour
1 c. milk
1 c. cubed sharp American cheese
1/2 c. sour cream
1 (4 oz.) can sliced mushrooms
2 c. cubed cooked ham
1 c. soft bread crumbs
1 tbsp. melted butter

Break cauliflower into buds and cook in salted water 10 minutes or until tender. Melt 4 tablespoons butter and stir in flour. Add milk and cook until thick. Add cheese and sour cream; stir until cheese melts. Drain mushrooms. Add mushrooms, cauliflower and ham to cheese mixture. Pour into 2-quart casserole. Combine crumbs with butter and put on top of casserole. Bake, uncovered, for 40 minutes at 350 degrees. Serves 6.
