SUNDAY BRUNCH CASSEROLE 
This is a great holiday breakfast. Prep time is only 15 minutes and your family will love it. Make the coffee and have OJ and your set!

8 eggs or 12 egg whites
1/2 cup milk
6 slices of white or wheat bread
12 slices bacon, turkey or pork, cooked
1 cup shredded cheddar cheese (I use low-fat)
salt and pepper, to taste
butter, oil olive or Pam

In a bowl whisk eggs or egg whites and milk. Cut bread into small cubes. Grease a 6x9-inch glass Pyrex cooking pan with either butter or olive oil (spray Pam can also be used). Place bread cubes evenly in pan and pour egg mixture over. Cover with foil and place in the refrigerator over night. The bread will soak up most of your egg mixture.

The next morning combine cooked crumbed bacon (you can also substitute cooked sausage ground) and cheese to mixture. If mixture is dry add 2 more eggs with milk to make mixture moist. Add salt and pepper, to taste.

Preheat oven to 350°F and bake for 30 to 45 minutes. Top of casserole will be a very light golden brown. Casserole will rise to the top of pan. Slice and enjoy!!!
