GALT HOUSE PEA SALAD 
1 (10 oz.) pkg. frozen peas
2 hard boiled eggs, grated
1 c. red bell pepper, diced
1 1/2 c. mayonnaise
1/2 c. celery, diced
1 sm. onion
1 c. American cheese, diced
Salt & white pepper to taste

Blanche peas in boiling water for 30 seconds. Immediately plunge into ice water. Drain thoroughly. In a large bowl, combine peas with remaining ingredients. Chill before serving.
