WHOOPIE PIES 
1/2 c. shortening
2 eggs
1 c. sugar
2 c. flour
4 tbsp. cocoa
1 tsp. baking soda
1/2 tsp. baking powder
1 c. milk

Cream shortening, eggs and sugar. Sift remaining dry ingredients together and add to creamed mixture alternately with milk. Drop from tablespoon onto cookie sheet lined with waxed paper. Bake at 425 degrees for 8 minutes, or until toothpick inserted comes out clean. Cool completely. Put two cookies together with a generous spoon of filling.

FILLING:

3 c. confectioners' sugar
3/4 c. shortening
2 egg whites
1 tbsp. vanilla extract
Dash of salt

Beat all ingredients together until light and fluffy.
