PRUNE-APPLE SPICE CAKE | |
2 c. sugar 1 1/2 c. vegetable oil 3 eggs 3 c. flour 2 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1/2 tsp. cloves 2 c. prunes, pitted & coarsely chopped 2 c. coarsely shredded apples 1 c. chopped walnuts In large bowl beat sugar, oil and eggs for 2 minutes with electric mixer at medium speed. In separate bowl, combine dry ingredients, gradually mix into egg mixture. Mix prunes, apples and nuts at low speed to blend thoroughly. Spoon into buttered and floured 10" tube pan or bundt pan; smooth top. Bake in 325 degree oven for 1 1/2hours until springy to touch and pick inserted in center comes clean. Cool in pan 15 minutes. Invert onto rack to cool. Dust with confectioners' sugar. |
