ESTER THOMAS' HOT ROLLS 
1 c. water
1/4 c. sugar
2 tsp. salt
1/2 c. shortening
1/2 c. instant potatoes (optional)
1 c. milk
1 egg
6 or 7 c. flour
2 pkgs. yeast
1/4 c. lukewarm water
1/4 tsp. sugar

Heat the first 5 ingredients until shortening is melted. Put in mixing bowl; add the milk and beaten egg. Dissolve yeast and sugar in the 1/4 cup water. When the water and milk mixture is lukewarm, add the yeast. Beat in 2 cups flour. Keep adding flour until mixture is ready to knead. Knead it several times. Cover with shortening or oil and cover. Let rise until double. Make into rolls and let rise. Bake at 375 degrees for 15 to 20 minutes.
