SHAKER LEMON PIE 
4 lg. lemons
4 c. sugar
9 well beaten eggs
Double pie crust

GLAZE:

2 egg whites, beaten

Cut 2 lemons into paper thin slices. Remove the peel and pith of the remaining lemons, slice very thin. Put all lemon slices in a large mixing bowl. Add sugar; toss well. Cover with plastic and let mixture rest overnight.

Next day: Add beaten eggs. Put into crust and top with crust. Brush top with egg white glaze. Bake at 450 degrees for 15 minutes. Reduce heat to 375 degrees and bake for 30 minutes or until crust is golden brown.
