ENCHILADAS 
8 tortillas
1/4 lb. hamburger
1/4 onion (chopped)
2 c. shredded Cheddar cheese
2 c. shredded Mozzarella cheese
2 tbsp. oil for frying

SAUCE:

2 tbsp. flour
2 tbsp. butter
1 tsp. chili powder
1/4 tsp. salt
Dash pepper
1/4 c. tomato sauce
1 c. water

Melt butter in small saucepan. Add flour and chili powder and other seasonings. Mix into smooth paste. Add water slowly stirring constantly until sauce is smooth. Add tomato sauce.

Fry tortillas in a small amount of oil and set aside. Fill center of each tortilla with hamburger, onion and Cheddar cheese mixture.

Fold each tortilla that has been filled into thirds leaving seam on bottom. Sprinkle Mozzarella cheese on all tortillas after they have been placed in a square glass casserole and bake 10 minutes in 400 degree oven.
