SWEET POTATO SOUFFLE 
4 lg. sweet potatoes
4 eggs
1 tsp. nutmeg
1 c. coconut
2 c. sugar
1 c. evaporated milk
1 c. nutmeats
2 sticks butter

Boil potatoes with skins on - cool. Peel and mash with all the rest of the ingredients together. Put into buttered dish. Bake at 350 degrees for 35 to 40 minutes. Easy and delicious.
