SMOKED SAUSAGE WITH RICE
12 oz. smoked sausage (klobasa?)
1 lg. onion, sliced
1 lg. green pepper (1-inch pieces)
1 c. diagonally sliced celery
1 can (16 oz.) tomatoes, quartered
1 can beef broth (10 1/2 oz.)
1 can (8 oz.) sliced pineapple, unsweetened
1/4 tsp. garlic powder
1/4 tsp. pepper
1 tbsp. brown sugar
3 tbsp. cornstarch

Cook sausage in 1/2 cup water for about 15 minutes. Remove from water and cut in thin slices. Combine sausage, onion, green pepper and celery in large skillet. Cook until vegetables are tender crisp. Add tomatoes, broth, pineapple (drain, cube and reserve juice) and seasonings. Cover and simmer 5 minutes. Blend cornstarch with pineapple juice. Pour into meat-vegetable mixture. Cook, stirring, until clear and thickened (about 2 minutes). Serve over cooked rice. Yield: 6 servings.
