PINEAPPLE UPSIDE-DOWN CAKE 
3 egg yolks
1 c. sugar
5 tbsp. pineapple juice
1 c. self-rising flour
1 tsp. baking powder
3 egg whites
1 c. brown sugar
1 small can sliced pineapple
4 to 5 cherries

Melt 1/2 cup butter in big iron frying pan. Add brown sugar. Spread evenly in bottom of pan. Lay sliced pineapple in bottom of pan and put cherries in center of pineapple. Beat egg yolks and sugar. Add flour, pineapple juice and baking soda. Fold in stiffly beaten egg whites and pour batter into skillet over fruit and brown sugar.

Bake at 325°F for 45 minutes or until brown.
