SPINACH CASSEROLE 
2 pkgs. frozen chopped spinach
1 med. onion, chopped
4 tbsp. butter
2 tbsp. flour
1/2 c. spinach liquid
1/2 c. evaporated milk
1 (6 oz.) roll jalapeno cheese (from dairy case)
1 tsp. Worcestershire sauce
Tony's Creole Seasoning, to taste
Salt and pepper, to taste
1/2 c. bread crumbs

Cook spinach following package directions. Drain; reserve liquid. Melt butter in skillet over low heat; add onions and saute until clear. Add flour, stirring until smooth, but not brown. Pour in spinach liquid and milk slowly, stirring constantly to avoid lumps. Cook until smooth and thick. Add Worcestershire sauce, cheese and seasonings; stir until melted.

Combine with cooked spinach. Put in buttered casserole and sprinkle with bread crumbs. Bake in 350 degree oven until hot. (For less spicier version, substitute 6 ounces Velveeta for jalapeno cheese.) Enjoy! Serves 6.
