HAM AND BEAN SOUP 
1 lb. dried navy beans
Ham bone, meat and fat
Salt
3 whole cloves
5 peppercorns
1 bay leaf
1 lg. carrot, chopped
1 onion, diced

Rinse navy beans. Simmer 2 minutes, allow to sit overnight. Simmer a ham bone, meat and fat for 1 - 2 hours. Cool, clean from bone.

Next day, add salt to beans and soaking water. Simmer 1 hour. Drain. Add cleansed beans to ham broth with cloves, peppercorns and bay leaf. Simmer 2 1/2 hours. Add carrot and onion. Simmer another hour.
