BUTTERMILK BISCUITS 
2 c. all-purpose flour
3 tsp. baking powder
2 tsp. sugar
1/2 tsp. cream of tartar
1/4 tsp. baking soda
1/2 c. shortening
3/4 c. buttermilk
1/4 tsp. salt

Stir together flour, baking powder, sugar, cream of tartar, soda and 1/4 teaspoon salt. Cut in shortening until the mixture resembles coarse crumbs. Make a well in the center. Add the milk all at once; stir just until the dough clings together. Knead gently on a lightly floured surface 10-12 strokes. Roll or pat to 1/2 inch thickness. Cut with a 2 1/2 inch biscuit cutter, dipping cutter in flour between cuts. Place on ungreased baking sheet. Bake in 450 degree oven for 10-12 minutes or until golden. Serve warm. Makes 10-12 biscuits.
