HEARTY BEEF CASSEROLE 
1 1/2 lbs. ground beef
2 lg. onions, chopped
2 (4 oz.) cans mushrooms, drained
1 pkg. UNCLE BEN'S® wild rice mixture, cooked according to pkg. directions (use regular not quick)
2 c. sour cream
2 tbsp. cooking sherry (opt.)
1/2 - 3/4 c. grated cheese (cheddar is best)

Brown meat and onions. Drain fat. Add mushrooms, cooked rice, sour cream, sherry (if desired) and grated cheese. Bake, uncovered for 30 minutes at 350 degrees. This is the original recipe and is quite rich. For a "lite" version, I usually decrease ground beef to 1 pound, decrease sour cream to 1 cup and omit cooking sherry. "Lite" sour cream may also be used.
