VERSATILE COOKIE MIX 
4 c. white or whole wheat flour
1 1/4 c. sugar
1 1/4 c. brown sugar
3 tsp. baking powder
1/2 tsp. salt
1 1/2 c. shortening

Mix flour, sugars, baking powder and salt. Cut in shortening until mixtures resembles fine crumbs. Place desired amounts in containers, seal tightly, label and refrigerate no longer than 10 weeks. Yield 9 to 10 cups cookie mix.
