GUMDROP OATMEAL COOKIES 
1 c. butter
1 c. brown sugar
1 tsp. vanilla
1 tsp. baking soda
1/4 tsp. salt
1 c. flaked coconut
1 c. colored gumdrops, omit the black ones
1 c. white sugar
2 eggs
2 c. sifted flour
1 tsp. baking powder
2 c. quick cooking oatmeal
1 c. chopped walnuts

Cream butter and sugars together. Add eggs, vanilla and beat well. Sift dry ingredients together. Stir into cream mixture. Add remaining ingredients. Drop by teaspoons on an ungreased cookie sheets 2 inches apart. bake at 375 degrees for 10 minutes.

This was an EXCELLENT gumdrop cookie recipe! They were crispy and delicious -- just like the ones my mother used to make! I eliminated the coconut and walnuts only because I had none on hand (it was a shut-in snow blizzard day at home), and substituted wheat flour because it's all I had on hand, and they turned out just great! THANKS! : )

At Christmas I use only the red and green gumdrops; makes a great Christmas cookie!
