RED VELVET CAKE 
1/2 c. shortening
1 1/2 c. sugar
2 beaten eggs
2 oz. red food coloring
3 tbsp. Nestle's Quick cocoa
1 tsp. salt
1 tsp. vanilla
1 c. buttermilk
2 1/2 c. sifted cake flour, sifted 3 times
1 tsp. baking soda, dissolved in 1 tbsp. vinegar

Cream shortening and sugar; add beaten eggs. Make paste of coloring and cocoa. Add to creamed mixture. Add salt, vanilla and flour alternately with buttermilk. Fold in vinegar and soda mixture. Pour into two 9 inch greased and floured pans. Bake at 350 degrees until cake tests done, about 25 to 30 minutes. Frost when cool with white fluffy frosting.
