PRUNE-COCONUT BARS 
2 c. chopped pitted prunes
1 tbsp. grated orange rind
1/2 c. water
1 c. rolled oats
1 c. all purpose flour
1/3 c. wheat germ
1/2 c. coconut
1/2 c. vegetable oil

In a small saucepan combine prunes, orange rind, and water. Cook until soft and smooth. Combine oats, flour, wheat germ, coconut, and oil. Stir well. Place 1/2 of the mixture into the bottom of an 8 inch square baking pan and press down. Pour the cooked mixture on top and spread evenly. Top with the other 1/2 of the mixture and press down. Bake at 350 degrees for 30 minutes or until top is light brown. Cool and cut into bars.
