GLORIOUS PINEAPPLE PIE 
3 egg whites
1 c. sugar
1 tsp. vanilla
21 crushed Ritz crackers
2/3 c. chopped nuts
1 (8 oz.) pkg. cream cheese softened
3/4 c. confectioners sugar
1 c. whipping cream
1 tbsp. sugar
1 (8 oz.) can crushed unsweetened pineapple, drained

Beat egg whites stiff, then beat in sugar and vanilla gradually. Fold in Ritz crackers and nuts. Spread in non stick or lightly greased 9 inch pie plate. Bake 30 minutes at 350 degrees then cool. Blend cream cheese with confectioners sugar and spread over baked crust. Beat cream stiff with 1 tablespoon sugar and fold in pineapple. Spread over pie and refrigerate 2 hours or more. Decorate with nuts. Serves 8. Best served the same day that it is made.
