SWEET POTATO PUDDING 
2 lg. sweet potatoes, grated
1 1/2 sticks butter
2 1/2 c. sugar
1 1/2 tsp. vanilla
3 lg. eggs
1 tbsp. flour
1 lg. can Carnation milk
Dash of salt

Melt butter. Grate potatoes in large bowl. Add egg, sugar, salt, flour, butter, vanilla and milk; mix well. Pour into a greased pan or baking dish. Bake at 325 degrees for 1 hour or until toothpick comes out clean when inserted in center. Cool and cut into squares.
