MY FAVORITE TOFU | |
1/2 lb. tofu 2 tbsp. lite soy sauce 2 tbsp. vegetable oil 1 clove minced garlic 1/2 c. chopped onion 1/2 c. chopped green pepper 1/2 c. sliced mushrooms (optional) 1 c. pasta sauce 3 1/2 c. cooked elbow macaroni 1/2 c. shredded cheese Drain tofu on a towel, cut into 1/2 inch cubes or crumble. In large skillet, saute garlic, onion, green pepper and tofu in vegetable oil until tender. Sprinkle with tamari. Add sauce and elbows. Top with cheese. Cover and reduce heat to low. Ready to eat when cheese is melted. Takes 30 minutes to prepare and serves 4. |
