PICKLED WATERMELON RIND 
3 lb. watermelon rind, peeled
2 c. distilled vinegar
4 (3") cinnamon sticks
2 tbsp. whole allspice
2 tbsp. whole cloves

Soak watermelon rind in salt water to cover (3 tablespoons salt to 1 quart water) overnight. The next morning, drain, cover with fresh water and cook until tender. Drain. Bring sugar and water to boil. Add spices tied in a bag or cheesecloth. Add watermelon rind and simmer 45 minutes. Can according to directions for method desired.
