WATERMELON RIND PICKLE 
Select firm watermelon and trim off green skin and pink flesh.

7 lbs. watermelon rind, cut in inch cubes
5 lbs. sugar
1 qt. vinegar or more
1 lg. stick of cinnamon (broken up)
5 drops oil of cinnamon
1 handful whole cloves
1 bottle Lilly's lime from drug store

Dissolve Lilly's lime in enough water to cover rind. Let stand overnight. Next morning rinse in cold water. Pour this water off. Now cover with cold water and boil until rind is clear. Make syrup of vinegar and sugar. Add spices. Then add rind to syrup mixture and cook until rind is transparent. Add oil of cinnamon, cover with syrup in jars and seal while hot.
