BAKED SLICED POTATOES 
4 med. baking potatoes
1/4 c. vegetable oil or melted butter
1 tsp. salt
1/2 tsp. black pepper
1/2 tsp. dried thyme, oregano, sage or basil (opt.)

1. Preheat the oven to 450 degrees. Peel the potatoes and slice 1/8" thick. Place the slices in a bowl with the remaining ingredients and toss well. Place slices in a greased 15 1/2" x 10 1/2" x 1" baking pan, spreading out the slices so that they overlap slightly.

2. Bake, uncovered for about 20 minutes or longer for crisper potatoes. This is an easy substitution for French fries.
