BANANA NUT BREAD 
2 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3/4 c. sugar
1/4 c. butter
1 egg
1 c. milk (or buttermilk)
2/3 c. mashed banana, about 2 med.
1/2 c. chopped walnuts

Sift together the flour, baking powder, soda and salt; set aside. In another bowl, cream sugar and butter until light. Beat the egg lightly then stir into the butter mixture. Beat into this the mashed bananas. Combine the dry mixture alternately with the milk (in thirds). Stir the walnuts into the batter. Place batter in 8"x4" loaf pan that has been well greased and floured. Bake at 350 degrees for 1 hour.

This bread freezes well and can be made into two smaller mini loaves for gift giving.
