COLD PACK PICKLES | |
Med. size cucumbers 4 c. vinegar 4 tbsp. pickling salt 4 tbsp. alum 6 tbsp. mixed pickling spice Enough water to fill each jar Pack fresh picked cucumbers of medium size into a gallon jar. Pour the above ingredients over them. Let set for 6 or 8 weeks but can set for much longer. A week or so before you are ready to use them, drain off the vinegar mix, and discard. Chunk the cucumbers into pieces and return them to jar. Pour over them 8 cups of sugar. Let stand until sugar is dissolved. When sugar is melted pickles can be put in refrigerator as they are best cold, but will keep fine at room temperature. They are crisp and good. |
