GINGERBREAD COOKIES 
1 c. butter
1/4 c. sugar
1/2 c. molasses
1 egg
1/2 tsp. baking soda
3 1/2 c. all-purpose flour
1 1/2 tsp. ground ginger
1 tsp. ground cinnamon

Cream together butter, sugar, molasses, and egg. Add baking soda, flour, ginger, and cinnamon. Mix until smooth. Refrigerate for 2 hours or overnight. Roll out onto a lightly floured surface until 1/8 inch thick. Cut with a cookie cutter. Place on ungreased baking sheets. Bake in a 375 degree oven for 12 to 15 minutes. 72 sm. cookies. Calories per cookie: 52.
