PARMESAN FISH 
1 lb. fish fillets
1 egg
1 tbsp. milk
1/3 c. bread crumbs or cracker meal
1/3 c. grated Parmesan cheese
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. paprika
1/2 c. Crisco oil

Cut fish (fresh or frozen fillets) into serving portions and pat dry. Combine egg and milk. Dip fillets into egg mixture; then into combined crumbs, cheese and seasonings. In skillet, fry in hot oil until fish flakes and is golden brown on each side. Garnish with lemon wedges and parsley. Makes 3 to 4 servings.
