WELSH FRIED CAKE 
1 c. butter
1 1/2 c. sugar
2 eggs
1/4 c. milk
1/2 tsp. salt
4 c. flour
1/4 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. nutmeg
1 c. currants

Cream shortening and sugar. Add eggs and milk alternately with dry ingredients. Add currants mix and chill. Roll out about 1/4 inch thick on lightly floured surface and cut with cookie cutter. Set dial at 350 degrees on electric fry pan and brush lightly with oil. When cookies brown on one side, turn and fry on other side. Sprinkle with sugar while still warm if desired. Cool on wire rack. Makes 4-5 dozen.
