ORANGE-COCONUT CAKE 
Filling:

2/3 c. sugar
3 tbsp. flour
1 c. orange juice
2 egg yolks
2 tbsp. butter

Mix sugar and flour in a saucepan. Add orange juice and egg yolks. Place over medium heat and bring to a boil, stirring constantly. Cook one minute. Add butter and stir well. Cool before using. Stir coconut into filling or spread filling on cake, then sprinkle coconut on top.

Cake:

2 1/2 c. sifted self-rising flour
1 c. orange juice
1 - 7 oz. package flaked coconut

Cream butter, shortening and sugar. Add eggs and beat. Add orange rind. Add juice and flour a little at a time until all is used.

Bake in oven at 350°F for 25 minutes.
