BLACK & PEARL BARLEY PILAF 
1 cup pearl barley, cooked to pkg. directions
1 cup black barley, cooked to pkg. directions
1/2 cup chopped celery
1/2 cup chopped onion
1/4 cup slivered almonds
2 tsp. butter
2 tsp. olive oil
1 tsp. chopped fresh garlic (optional)

Cook the pearl and black barley separately, they take about 45 minutes to cook. Drain and rinse barley to get rid of any starch residue. Set aside.

Heat skillet, add butter, when it starts to foam add the olive oil and garlic. Sauté the celery and onions until crisp tender 5 to 10 minutes. Add the cooked barley, continue to sauté until the barley is heated, add the slivered almonds.

Serve as a side dish with chicken or pork.
