BAY COUNTRY CRAB SOUP | |
1 tbsp. salt 1 lb. beef shin, bone in 3 qts. water 1 lg. onion, chopped 2 lg. stalks celery, chopped 1 (1 lb.) can tomatoes 1/4 tsp. black pepper 1/8 tsp. cayenne pepper 1 (10 oz.) pkg. frozen mixed vegetables 1 pkg. fresh soup vegetables 1 lb. Maryland crabmeat 1/2 lb. (8 oz.) Maryland claw crabmeat Put first 8 ingredients in a large pan and simmer, covered, until meat is very tender (about 3 hours). Add rest of ingredients and simmer, covered, until vegetables are done. Makes about 5 quarts soup. |
