PEANUT BUTTER CHOCOLATE CHIP
COOKIES
 
1/2 c. granulated sugar
1/2 c. packed brown sugar
1/2 c. crunchy peanut butter
1/4 c. shortening
1/4 c. butter, softened
1 egg
1 1/4 c. whole wheat flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1 (6 oz.) pkg. chocolate chips

In a large bowl, mix together with mixer, the first 6 ingredients until smooth. In medium bowl mix the remaining 5 ingredients. Gradually add flour mixture to first bowl. Dough will be stiff, but may need 1 to 2 tablespoons of water added. Drop batter onto ungreased cookie sheet by rounded teaspoonfuls, 3 inches apart. With fork dipped in sugar, criss-cross each cookie to flatten. Bake at 375 degrees for 10 to 12 minutes or until light brown. Cool on wire rack.
