SWEET AND SOUR CHICKEN 
1/2 c. butter
1/2 c. chopped onion
1/2 c. chopped carrots
1/2 c. diced green pepper
3/4 c. catsup
1 (20 oz.) can pineapple chunks
1/4 c. packed brown sugar
1 tsp. soy sauce
3 tbsp. vinegar
1 (3 lb.) chicken (cut up) or 3 lbs. pork steak or chops

Saute onion, green pepper and carrots in butter over medium heat in 2 quart saucepan for 5 minutes.

Add catsup, pineapple juice only (not chunks), vinegar, brown sugar and soy sauce. Bring to boil, boil for 5 more minutes. Add pineapple chunks to sauce.

Put chicken (skin side up in 1 or 2 baking pan). Pour mixture over chicken evenly covering as much as possible.

Cover pan(s) with aluminum foil. Bake covered at 350 degrees for 45 minutes. Remove foil and bake uncovered an additional 30 minutes. Serves 4 to 6.

Can substitute pork steak or chops.
