FRENCH BREAD PUDDING 
4 c. cubed French bread
1/2 c. raisins
1/2 c. sugar
1/4 tsp. salt
2 3/4 c. skim or lowfat milk
1/4 c. sherry or brandy
4 eggs, slightly beaten
Cinnamon

Heat oven to 350 degrees. Spray 2 quart casserole or baking dish with cooking spray. Place bread cubes in casserole; sprinkle with raisins. In large bowl, combine remaining ingredients, mix well. Pour over bread cubes and raisins. Bake at 350 degrees for 60-70 minutes or until knife inserted in center comes out clean. Serve warm and garnish with nutmeg.
