ZUCCHINI BREAD | |
3 c. flour 2 c. sugar 1 tbsp. cinnamon 1 tsp. baking soda 1 tsp. salt 1 c. oil (vegetable) 2 c. grated zucchini 1 tbsp. vanilla or almond extract Mix dry ingredients. Combine wet ingredients and stir. Add zucchini last. (May add more than 2 cups.) Bake 1 hour at 325 degrees, in 2 greased loaf pans. Add raisin or nuts if desired. |
