SALMON LOAF | |
1 beaten egg 1/2 c. milk 2 c. soft bread crumbs 1 tbsp. butter, melted 1 tbsp. chopped onion 1/2 tsp. salt 1 (16 oz.) can salmon, drained & flaked In a bowl combine egg, milk, soft bread crumbs, melted butter, chopped onion and salt; add salmon; mix. Shape into loaf on a greased shallow baking pan or in a loaf pan. Bake at 350 degrees for 35 to 40 minutes. Serve with sauce below. SAUCE: Cook 2 tablespoons chopped onion in 3 tablespoons butter until onion is tender but not brown. Blend in 2 tablespoons flour, 1/2 teaspoon salt. Add 1 1/4 cups milk, cook, stirring constantly until the sauce thickens and bubbles. |
